yum, pig and chicken together at last!

Ok, Nancy has inspired me to get back in the kitchen and start trying some new stuff for my diet. I have had the desire to try and fry up some chicken fingers for a while now and finally got around to it tonight.. :). I crushed up some spicy pork skins and tossed the chicken in an egg bath and then coated them with the crushed pork rinds. Gave them a quick fry on the stove top and they were DELICIOUS! I had a few for "dinner" tonight at 8:30 and will probably reheat the remainder for lunch tomorrow. I made a dip consisting of buffalo sauce and ranch mixed together and it was as good as any I have had at Zaxby's or pretty much anywhere... everyone here tried them and they all liked the taste too. Sounds like another hit!
